Food of the Week: Celery

Celery is rich in vitmins A, B3, B5, C, E, K, folate, calcium, iodine, iron, magnesium potassium, sodium, zinc and fiber.

Celery is alkalizing to the body, thanks to it’s rich mineral content. It contains phtalides, which help reduce high blood pressure, it stimulates the immune system, helps ease joint pain and has anti-cancer properties. It is also antiseptic and helps with mouth ulcers and sore throat.

Celery is best eaten raw. I love celery juice mixed with beet and apple juices, or celery sticks dipped in hummus! Yum!
